  • 8 ears sweet corn, shucked

  • 3 sprigs fresh thyme or 1 teaspoon dried thyme leaves
  • 1 bay leaf
  • 3 teaspoons salt
  • 1 smoked chili (optional)
  • 4 ounces (1 stick) unsalted butter
  • 3 quarts vegetable stock or water
  • 4 teaspoons cornstarch, dissolved in ¼ cup water
  • 1 quart cream or milk
  • White pepper and additional salt to taste
  • 2 tablespoons chopped fresh chives

 

INSTRUCTIONS:

  1. Cut the corn kernels from the cob using a slicing motion with a kitchen knife. Set the kernels aside and reserve the cobs for later use.
  2. In a large soup pot over medium-high heat, heat the olive oil for about 1 minute. Add the corn cobs, chopped onions, celery, potatoes, thyme, bay leaf, salt, and the optional smoked chili if using. Sauté until the onions become translucent, approximately 5 minutes.
  3. Incorporate the butter into the pot and cook gently, allowing the vegetables to stew in the butter, for an additional 5 minutes.
  4. Pour in the vegetable stock or water, raising the flame to high. Bring the mixture to a full boil, then reduce the heat to a gentle simmer. Continue cooking for 10 more minutes.
  5. Remove the corn cobs from the chowder. Add the cornstarch mixture and simmer for an additional 5 minutes, allowing the chowder to thicken.
  6. Stir in the cream or milk, adjusting the seasoning with white pepper and salt to suit your taste.
  7. Ladle the Corn and Potato Chowder into bowls, each adorned with a sprinkle of chopped fresh chives.
