INGREDIENTS:

  • 4 hard-boiled eggs, chopped
  • 1 rib celery, diced
  • 5 or 6 scallions, sliced
  • 1/2 green pepper, diced
  • 1/3 cup mayonnaise
  • 1/2 teaspoon prepared mustard

 

INSTRUCTION:

  1. Combine all the ingredients, and serve on lettuce.

 

PER SERVING:

  • 7 grams of carbohydrates and 2 grams of fiber, for a total of 5 grams of usable carbs and 14 grams of protein.
