INGREDIENTS:

  • 250g/9oz sultanas
  • 150g/5oz currants
  • 250g/9oz raisins
  • 300g/11oz mixed dried fruit, chopped
  • 50g/2oz mixed peel
  • 120ml/4fl oz brown ale
  • 2 tablespoons brandy
  • 75ml/3fl oz freshly squeezed orange juice
  • 75ml/3fl oz freshly squeezed lemon juice
  • 1 teaspoon grated orange zest
  • 1 teaspoon grated lemon zest
  • 225g/8oz suet, grated
  • 225g/8oz soft brown sugar
  • 3 eggs, lightly beaten
  • 200g/7oz white breadcrumbs
  • 75g/3oz self-raising flour
  • Pinch of salt
  • 1 teaspoon mixed spice
  • 1/4 teaspoon freshly grated nutmeg
  • 100g/4oz blanched almonds, roughly chopped

 

PREPARATION:

  1. In a large bowl, combine the sultanas, currants, raisins, mixed dried fruit, mixed peel, brown ale, brandy, orange juice, lemon juice, orange zest, and lemon zest. Stir well to combine. Cover the bowl and let the mixture steep overnight.
  2. The following day, add the grated suet, soft brown sugar, eggs, white breadcrumbs, self-raising flour, salt, mixed spice, grated nutmeg, and chopped blanched almonds to the bowl with the fruit mixture. Mix well to combine all the ingredients thoroughly.
  3. Place a 2-litre/3 1/2pt pudding basin on a trivet inside a large saucepan with a lid. Fill the saucepan with enough water to come halfway up the side of the basin. Remove the basin and set the water to boil.
  4. Brush the inside of the pudding basin with melted butter and line the bottom with baking parchment. Spoon the pudding mixture into the basin, then cover it with a round of buttered baking parchment. Top with pleated foil, securing it with string around the rim of the basin.
  5. Place the pudding basin back onto the trivet inside the saucepan of boiling water. Steam the pudding for 8 hours, ensuring the lid of the saucepan is on and topping up with boiling water as necessary.
  6. Once steamed, carefully remove the pudding from the saucepan and invert it onto a serving plate.
  7. Serve the Christmas pudding hot, accompanied by brandy sauce, cream, or ice cream.
