  • 2 tbsp soy sauce
  • 1/2 tsp Chinese five-spice powder
  • 2 ears of corn or 7oz (200g) canned sweet corn
  • 2 good handfuls of fresh baby leaf spinach
  • 2 tbsp cornstarch
  • 4 tbsp water
  • 2 eggs, beaten

 

INSTRUCTIONS:

  1. Begin by placing the chicken stock in a pan and adding the crushed garlic, grated ginger, chopped scallions, soy sauce, and Chinese five-spice powder. If you’re using fresh corn, carefully remove the kernels from the ears of corn and add them to the pan. Bring the mixture to a gentle boil, then lower the heat, cover the pan, and let it simmer for about 20 minutes.
  2. If you’re using canned sweet corn, include both the corn and the liquid from the can into the pan. Add the fresh baby leaf spinach as well. Bring the mixture back to a boil, then reduce the heat and let it simmer for about 1 minute or until the spinach wilts. Taste the soup and adjust the seasoning by adding more soy sauce if desired.
  3. In a separate bowl, combine the cornstarch and water to create a smooth mixture. Stir this into the soup, bringing it back to a gentle boil. Let it simmer while stirring for about 1 minute, allowing the soup to thicken slightly.
  4. Gradually drizzle the beaten eggs into the soup while stirring gently. This will create delicate egg strands within the soup.
