INGREDIENTS:

  • 2 boneless, skinless chicken breast halves, cut into strips
  • 2 teaspoons Cajun seasoning
  • 2 tablespoons butter or margarine
  • 1-2 cups heavy cream
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon lemon pepper seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 4 ounces cooked linguine or fettuccine
  • Grated Parmesan cheese, to taste

 

INSTRUCTIONS:

  1. Place the chicken strips and Cajun seasoning in a resealable plastic bag. Rub and shake the bag to coat the chicken well with the seasoning.
  2. In a large skillet over medium heat, melt the butter or margarine. Add the coated chicken strips to the skillet and sauté them for about 5-7 minutes, or until they are cooked through. Reduce the heat to low.
  3. Pour the heavy cream into the skillet with the chicken and add the dried basil, lemon pepper seasoning, salt, pepper, and garlic powder. Stir the mixture continuously for about 5 minutes, or until the sauce thickens slightly.
  4. Add the cooked linguine or fettuccine to the skillet and toss it with the chicken and creamy sauce. Heat the mixture for another 5 minutes to ensure everything is warmed through.
