SERVES 6

INGREDIENTS:

  • 2 (15-ounce) cans chickpeas, rinsed
  • 2 large eggs
  • 6 tablespoons extra-virgin olive oil
  • 1 teaspoon garam masala
  • ⅛ teaspoon cayenne pepper
  • ⅛ teaspoon salt
  • 1 cup panko bread crumbs
  • ½ cup plain Greek yogurt
  • 2 scallions, sliced thin
  • 3 tablespoons minced fresh cilantro
  • 1 shallot, minced
  • 1 recipe Cucumber-Yogurt Sauce

INSTRUCTIONS:

  1. Pulse chickpeas in a food processor until coarsely ground, about 8 pulses. Whisk eggs, 2 tablespoons oil, garam masala, cayenne, and ⅛ teaspoon salt together in a medium bowl. Gently stir in processed chickpeas, panko, yogurt, scallions, cilantro, and shallot until just combined. Divide into 6 equal portions and gently pack into 1-inch-thick patties.
  2. Heat 2 tablespoons oil in a 12-inch nonstick skillet over medium heat until shimmering. Carefully lay 3 patties in the skillet and cook until well browned and firm on both sides, 4 to 5 minutes per side.
  3. Transfer cakes to a plate and tent with aluminum foil. Return the now-empty skillet to medium heat and repeat with the remaining 2 tablespoons oil and remaining 3 patties. Serve with Cucumber-Yogurt Sauce.

TIPS:

  • Texture Balance: Achieving the perfect texture is crucial. Ensure that the chickpeas are coarsely ground in the food processor, with a combination of finely chopped and larger pieces to bind the patties while maintaining a desirable texture.
  • Gentle Mixing: Be cautious not to overmix the chickpea mixture during preparation, as this can result in a mealy texture in the cakes. Mix gently until just combined for the best results.
  • Serve with Cucumber-Yogurt Sauce: The Chickpea Cakes are wonderfully complemented by a fresh and cooling Cucumber-Yogurt Sauce. The sauce helps to brighten the dish, adding a refreshing element to each bite. Don’t forget to serve with lime wedges for an extra burst of tanginess.
