  • 3 onions, quartered
  • 2 large or 4 small to medium carrots, cut into chunks
  • 2 leeks, split, trimmed, washed, and cut into 2-inch lengths
  • 1 bay leaf
  • 4 allspice berries
  • 10 whole black peppercorns
  • 4 sprigs fresh thyme or 1 teaspoon dried thyme
  • Salt and freshly ground black pepper
  • Minced fresh parsley or dill for garnish

 

INSTRUCTIONS:

  1. In a large pot, combine the whole chicken, chicken stock (or water), quartered onions, carrot chunks, and leeks. Bring the mixture to a boil over medium-high heat, then immediately reduce the heat to medium-low. Skim any foam that rises to the surface. Add the bay leaf, allspice berries, peppercorns, and thyme to the pot, and season with salt and pepper. Allow the chicken and vegetables to simmer until they are nearly tender and the chicken is fully cooked, approximately 45 minutes. Check for doneness by inserting an instant-read thermometer into the thickest part of the chicken’s thigh; it should read 155–165°F.
  2. When the chicken and vegetables are almost done, preheat the oven to 200°F.
  3. Once the chicken is fully cooked, use a slotted spoon to transfer the chicken and vegetables to an ovenproof platter. Place the platter in the oven to keep the chicken and vegetables warm.
  4. Increase the heat to high and boil the remaining stock in the pot until it reduces by about 25 percent, which should take around 10 to 15 minutes.
  5. Strain the reduced stock into a large bowl or another pot. Taste and adjust the seasoning as needed.
  6. Present the dish in two ways: First, serve the flavorful chicken soup as a delicious first course, garnished with minced fresh parsley or dill. Next, serve the chicken and vegetables in deep bowls, garnished with the same herbs.

 

VARIATIONS:

  • Sour Chicken in a Pot with Cabbage: Add chopped green, Savoy, or Napa cabbage to the pot 15 minutes after adding the herbs. After reducing and straining the liquid, beat together cream, egg, and vinegar or lemon juice.
