  • 2–3 tbsp butter
  • 1/4 small celeriac, chopped
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 potato, chopped
  • 3 1/4 cups (750ml) vegetable or chicken stock
  • 1 bay leaf
  • Salt and freshly ground black pepper
  • Small handful of fresh chive stalks
  • 2/3 cup (150ml) milk
  • 4 oz (115g) Cheddar cheese, grated
  • 4 tbsp crème fraîche, plus extra to serve

 

INSTRUCTIONS:

  1. In a large saucepan, melt the butter over medium heat. Add the chopped celeriac, onion, carrot, and potato. Gently sauté while stirring for about 2 minutes, ensuring the vegetables soften without browning. Pour in the stock, add the bay leaf, and season with salt and pepper. Bring the mixture to a boil, then reduce the heat, cover the saucepan, and let it simmer gently for 30 minutes. Afterward, remove the bay leaf.
  2. Prepare for garnish by reserving 4 chive stalks. Finely chop the remaining chives and add them to the soup. Pour in the milk, grated Cheddar cheese, and crème fraîche. Gently heat the soup while stirring, allowing the cheese to melt and the soup to become piping hot. Be cautious not to let it reach a boiling point.
  3. Taste the soup and adjust the seasoning according to your preference. Ladle the soup into warm, shallow soup bowls. Add a dollop of crème fraîche to each serving. For an elegant touch, cut the reserved chive stalks in half and gently place them on top of each bowl, slightly crossed.
