INGREDIENTS:

  • 1 1/4 cups (156 g) flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup (120 ml) egg substitute
  • 3/4 cup (170 g) packed brown sugar
  • 1/2 cup (112 g) unsalted butter
  • 1 cup (130 g) sliced carrots
  • 1 apple, peeled, cored, and cut into eighths
  • 1 medium potato, peeled and cut into pieces
  • 3/4 cup (110 g) raisins

 

PREPARATION:

  1. In a bowl, stir together the flour, baking powder, baking soda, cinnamon, and ground nutmeg.
  2. In a blender, combine the egg substitute, brown sugar, and unsalted butter. Cover and blend until smooth.
  3. Add the sliced carrots to the blender mixture and blend until they are finely chopped.
  4. Add the apple to the blender and blend until it is chopped.
  5. Add the potato to the blender and blend until it is finely chopped.
  6. Stir the carrot mixture and raisins into the dry ingredients until well mixed.
  7. Grease and flour a 6-cup (1.4 L) mold and pour the pudding mixture into it.
  8. Cover the mold tightly with foil.
  9. Place the mold in the slow cooker.
  10. Cover the slow cooker and cook on high for 4 hours, or until the pudding is cooked through.
  11. Remove the mold from the slow cooker and let it cool for 10 minutes.
  12. Gently unmold the carrot pudding.
