- 7 cups water
- 2 teaspoons vegetable oil

- 1/4 teaspoon dried cumin
- 1/4 teaspoon ground ginger
- 1/4 teaspoon freshly ground white pepper
- 1/2 cup fresh cilantro, minced
INSTRUCTIONS:
- Begin by adding the kidney beans to the pressure cooker and pouring 3 cups of water over them, or enough to completely cover the beans. Cover the pressure cooker and allow the beans to soak overnight. After soaking, drain the beans and return them to the pressure cooker.
- Pour 4 cups of water over the soaked beans and add the vegetable oil. Lock the lid securely in place and bring it to high pressure. Maintain this pressure for 10 minutes. Afterward, remove the pressure cooker from the heat and allow the pressure to release naturally for 10 minutes.
- Quick-release any remaining pressure, and if the beans are fully cooked, drain them. If they require additional cooking, lock the lid into place again, return to high pressure, and cook for an additional 2–5 minutes.
- Now, it’s time to prepare the relish. In a blender or food processor, combine the cooked kidney beans, salt to taste, tahini paste, drained crushed pineapple, minced garlic, dried cumin, ground ginger, freshly ground white pepper, and minced cilantro. Pulse the mixture until it’s thoroughly blended but still retains some texture.
