The California Garden Salad with Avocado and Sprouts is a delightful embodiment of the Golden State’s vibrant, fresh, and wholesome culinary spirit. This salad captures the essence of California’s sun-soaked gardens and orchards, where avocados, tomatoes, and lettuce thrive in abundance.

The dressing, a harmonious blend of fresh-squeezed lemon juice, extra-virgin olive oil, finely chopped shallots or chives, salt, and freshly ground black pepper, sets the stage for the vibrant flavors to come. It provides a zesty and aromatic accompaniment that elevates the salad’s overall taste.

Serves 4

INGREDIENTS:

Dressing:

  • 1 tablespoon fresh-squeezed lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon finely chopped shallot or chive
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Salad:

  • 2 heads Boston or Bibb lettuce
  • 2 ripe tomatoes, cored, cut into 8 wedges each
  • 1 ripe avocado
  • 1 cup alfalfa sprouts

INSTRUCTIONS:

  1. Prepare the Dressing: In a small bowl, combine the fresh-squeezed lemon juice, extra-virgin olive oil, finely chopped shallot or chive, salt, and freshly ground black pepper. Mix well to create the dressing.
  2. Arrange the Lettuce: Lay out the lettuce leaves on four plates, arranging them in a flower-petal pattern with the stem ends pointing inward. You can reserve the smaller inner leaves for another use.
  3. Prepare the Tomatoes: Toss the tomato wedges in 1 tablespoon of the prepared dressing. Place four tomato wedges onto each salad.
  4. Prep the Avocado: Peel the ripe avocado, cut it into 8 wedges, and toss them with 1 tablespoon of the dressing.
  5. Assemble the Salad: Place two avocado wedges on each salad, creating a visually appealing arrangement.
  6. Divide the alfalfa sprouts into four bunches and place one bunch in the center of each salad.
  7. Finish with Dressing: Drizzle the remaining dressing over the salads or serve it on the side for individuals to add as desired.
  8. Serve Immediately: Present the California Garden Salad with Avocado and Sprouts immediately to enjoy its fresh and vibrant flavors.
