INGREDIENTS

  • 900g/2lb boneless lamb sirloin roast
  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 1 red pepper, seeded and diced
  • 1 green pepper, seeded and diced
  • 450g/1lb tomatoes, sliced
  • 350ml/12fl oz chicken stock
  • 1/2 teaspoon basil
  • 1/2 teaspoon grated lemon zest
  • 1/2 teaspoon chili powder
  • 225g/8oz long-grain rice

For the spice mix

  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon paprika
  • 1/8 teaspoon garlic powder

 

PREPARATIONS

  1. Preheat the oven to 180°C/350°F/Gas mark 4.
  2. Trim the lamb of any excess fat.
  3. In a small bowl, combine the spice mix ingredients: salt, cayenne pepper, black pepper, paprika, and garlic powder.
