INGREDIENTS:

  • 2/3 cups (300g) all-purpose flour, plus more for kneading
  • 1 1/2 tbsp sugar
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 6 tbsp (85g) butter, chilled, cut into thin slices
  • 1 cup (250ml) buttermilk, plus more for glazing the tops

 

INSTRUCTIONS:

  1. Preheat and Prepare: Preheat your oven to 425°F (220°C).
  2. Have an ungreased 10-inch (25 cm) round cake pan ready.
  3. Sift and Combine: In a large bowl, sift together the all-purpose flour, sugar, baking powder, baking soda, and salt.
  4. Use your fingertips to rub in the chilled butter until the mixture resembles fine crumbs. Alternatively, you can cut in the butter using two knives.
  5. Add the buttermilk and stir. If needed, add a little more buttermilk to make a soft dough.
  6. Shape and Cut: Turn the dough out onto a lightly floured work surface.
  7. Knead the dough once or twice, then gently shape it into a rectangle about 1 inch (2.5 cm) thick.
  8. Using a 2 1/2-inch (6 cm) round cookie cutter, cut out the biscuits.
  9. Place the biscuits in the prepared cake pan with their sides touching.
  10. Gather up the dough scraps, knead them together gently, and cut out the remaining biscuits. Discard any leftover scraps.
  11. Glaze and Bake: Brush the tops of the biscuits with buttermilk.
  12. Bake the biscuits for 15–20 minutes, or until they are risen and their tops are golden.
  13. Transfer the freshly baked Buttermilk Biscuits to a wire rack to cool for a few moments before serving them hot.
