INGREDIENTS:
- 3 lb (1.35 kg) raw or cooked beef or lamb bones
- 2–3 onions, halved
- 2–3 carrots, halved
- 1 bouquet garni (see page 24)
- Optional: bacon rinds or vegetable trimmings
INSTRUCTIONS:
- If using raw bones, preheat your oven to 400˚F (200˚C). Roast bones, halved onions, and halved carrots on a roasting pan for about 30 minutes, turning occasionally, until well-browned. Skip this step if using cooked bones.
- In a large pan, combine roasted bones and vegetables (or cooked bones if using), along with the bouquet garni. Optional: add bacon rinds or vegetable trimmings.
- Bring the mixture to a boil over high heat. Skim off any foam that rises to the surface using a slotted spoon.
- Reduce the heat to low, cover the pan with a lid, and let the mixture simmer gently for 3 to 4 hours.
- Strain the stock through a sieve into a separate container. Press the bones, vegetables, and bouquet garni against the sides of the sieve to extract all the flavorful liquid.
- Let the strained stock cool to room temperature. Transfer it to a covered container and refrigerate for up to 3 days.
- Before use, remove any solidified fat from the surface of the stock. Bring the stock to a boil in a pot before using it in your recipes.
