INGREDIENTS:

  • Handful of salt
  • 6 to 12 blue or rock crabs or 1 or 2 lobsters, about 3 pounds total

 

INSTRUCTIONS:

  1. Bring a large pot of water to a boil, adding a handful of salt to season the water.
  2. Gently add the blue crabs or lobsters into the boiling water. Use tongs to handle them, ensuring that they are fully submerged.
  3. For blue crabs, cook for approximately 5 minutes or until they turn red.
  4. For lobsters, start the cooking time when the water returns to a boil. Cook the first pound for about 8 minutes and add an extra 3 to 4 minutes per pound thereafter. For instance, a 3-pound lobster would boil for 15 to 20 minutes.
  5. Use an instant-read thermometer to check the doneness of larger lobsters. Insert the thermometer into the tail meat between the underside of the body and the tail joint; lobster is fully cooked at 140°F.
  6. Drain the crabs or lobsters in a colander for a few minutes.
  7. Enjoy the seafood as is, cooled for later consumption, or use the meat for other dishes.

 

HOW TO EAT CRABS AND LOBSTERS:

  • Twist off the claws and break them open with a mallet or nutcracker to pick and savor the meat.
  • Break off the apron and top shell. Rub off the feather gills.
  • Break the body in two and pick the meat from the crevices.

 

VARIATION:

  • Spicy Crab or Lobster Boil: Enhance the flavor by adding onions, celery, lime juice, thyme, allspice, hot chiles, paprika, and black pepper to the salted water before boiling. Cook the shellfish as directed.
