Blackberry and lime is a very popular combination, and you’ll find it in recipes for everything from tarts to cheesecakes to muffins. The flavors complement each other wonderfully!
INGREDIENTS: YIELD: 1 QUART
- 4 cups blackberries
- Juice and zest of 1 lime
- 1¼ cups sugar
- 1 cup Greek yogurt
- 1 teaspoon vanilla extract
INSTRUCTIONS:
- In a small bowl, combine the blackberries, lime juice and zest, and sugar. Stir and allow to macerate at room temperature for 1–2 hours.
- After the blackberries are ready, place all ingredients in a blender or food processor, and blend until smooth.
- Add to ice cream maker and follow the manufacturer’s instructions for freezing.
