INGREDIENTS

  • 1 cup raisins or dried currants
  • 4 large eggs
  • 1 cup granulated sugar
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • A pinch of salt

 

For the Bourbon Sauce:

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup bourbon whiskey
  • 2 large egg yolks

 

INSTRUCTIONS

For the Biltmore’s Bread Pudding:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the day-old bread cubes and raisins or dried currants. Set aside.
  3. In a separate mixing bowl, whisk together the eggs, granulated sugar, whole milk, heavy cream, pure vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt until well combined.
  4. Pour the egg and milk mixture over the bread and raisins. Gently toss to ensure that the bread is evenly coated and absorbs the liquid.

  3. In a separate bowl, whisk the egg yolks until they become slightly pale.
  4. Gradually pour a small amount of the hot bourbon mixture into the egg yolks, whisking constantly to temper the yolks.
  5. Slowly pour the tempered egg yolk mixture back into the saucepan with the remaining bourbon mixture, stirring continuously.
  6. Cook over low heat, stirring constantly, until the sauce thickens slightly. Be careful not to let it boil, as this may cause the sauce to curdle.
