INGREDIENTS:

  • 225g/8oz firm tofu
  • 125g/4 1/2oz plain flour
  • 2 tablespoons toasted wheatgerm
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • 1 egg
  • 1 tablespoon milk
  • 1 teaspoon hot pepper sauce
  • 2 tablespoons sunflower oil

For the ginger dipping sauce:

  • 100ml/3 1/2fl oz rice vinegar
  • 50g/2oz granulated sugar
  • 2 tablespoons light soy sauce
  • 1 teaspoon cornflour
  • 1 tablespoon finely minced fresh root ginger

 

PREPARATIONS:

  • To make the ginger dipping sauce, combine the rice vinegar, granulated sugar, light soy sauce, and 175ml/6fl oz water in a small saucepan. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes, stirring occasionally.
