Serves 4–6

INGREDIENTS:

  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 2 (14-ounce) cans diced tomatoes
  • 1/4 teaspoon sugar
  • 1 tablespoon tomato paste
  • 1/2 cup water
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh basil, chopped
  • Salt and pepper, to taste

INSTRUCTIONS:

  1. Begin by adding the olive oil to your pressure cooker and sauté the diced onion until it turns golden brown.
  2. Stir in the minced garlic and sauté for an additional 30 seconds, allowing the garlic to become fragrant.
  3. Add the diced tomatoes, sugar, tomato paste, and water to the sautéed onions and garlic.
  4. Lock the lid into place on your pressure cooker and bring it to high pressure. Once the pressure is achieved, turn the heat to low and cook for about 5 minutes.
  5. After the 5 minutes of cooking, remove the pressure cooker from heat and allow the pressure to release naturally.
  6. Stir in the fresh lemon juice and chopped basil. Season the sauce with salt and pepper to taste.
