  • ¹/³ cup (75 g) firmly packed brown sugar
  • ¹/³ cup (80 mL) golden syrup
  • 1 egg
  • 2½ cups (375 g) plain flour
  • 1 tablespoon ground ginger
  • 2 teaspoons cinnamon
  • ¼ teaspoon ground cloves
  • 1 teaspoon bicarbonate of soda

 

INSTRUCTIONS:

  1. Melt and Combine: In a saucepan, melt the chopped butter, brown sugar, and golden syrup together, stirring until the mixture is smooth. Allow it to cool slightly.
  2. Whisk and Mix: Whisk the egg and the melted butter mixture together in a large bowl until well combined.
  3. Combine Dry Ingredients: Sift the plain flour, ground ginger, cinnamon, ground cloves, and bicarbonate of soda over the butter mixture.
  4. Create Dough: Mix the dry and wet ingredients together until they form a smooth dough. Shape the dough into a disc, wrap it with plastic wrap, and refrigerate it for at least 1 hour or until it becomes firm.
  5. Preheat and Prepare: Preheat your oven to 180°C (160°C fan-forced) and line two baking trays with baking paper.
  6. Roll and Bake: Divide the chilled dough in half. Roll each half between sheets of baking paper until it’s approximately 5mm thick. Place the rolled dough onto the prepared baking trays.
  7. Bake to Perfection: Bake the gingerbread in the preheated oven for 10-12 minutes, or until they’re golden brown and firm to the touch.
