A delicious dish that can be made from beef, lamb or chicken, Shawarma is famous across all the Middle East, and has become an Arab Gulf food par-excellence.

SERVES: 4 to 6

PREP TIME: 20 minutes

MARINATING TIME: 8 hours

COOKING TIME: 1 hour

INGREDIENTS:

  • 2 lbs (1 kg) boneless chicken pieces, sliced into 1/2-inch (1.25 cm) wide strips
  • 4 tablespoons freshly squeezed lemon juice
  • 4 tablespoons extra-virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon Arabian Gulf Spice Mix (Baharat)

INSTRUCTIONS:

  1. Place all the ingredients in a casserole dish. Turn the chicken pieces until thoroughly coated. Cover the dish and refrigerate overnight to marinate.
  2. Preheat the oven to 350°F (175°C).
  3. Bake the chicken, uncovered, for 1 hour or until the chicken is fully cooked. The chicken should appear white at the center, and the meat should easily break apart with a fork.
  4. Serve the marinated chicken as a main dish, accompanied by Saudi-Style White Rice. Alternatively, you can use the chicken to make a sandwich with Pita Bread or serve it on top of a bed of Diced Vegetable Salad with Tahini Dressing.
