THE BASICS OF FRITTATE AND OTHER FLAT OMELETS:

Flat omelets, represented by the frittata as the classic example but with a versatile form, are open-face omelets that can be enjoyed for various meals. They are suitable for lunch, supper, brunch, or even as appetizers. One of the advantages of flat omelets is their ability to be made in advance and served at room temperature without compromising taste. They can be easily sliced into wedges or squares for serving.

Flat omelets are incredibly simple to prepare. To complete the cooking process, the pan is placed in the oven to set the top. Alternatively, you can run it under the broiler, being careful not to overcook the egg and make it tough.

These omelets can be customized according to personal preferences. They can be thick or thin and can incorporate a wide range of ingredients such as cooked meats, seafood, vegetables (fresh, frozen, or leftover), herbs, cheese, pasta, or cooked grains. The Spanish version, known as tortilla, often includes potatoes and onions, while the Italian frittata offers countless variations that expand beyond traditional Italian ingredients.
