  • 450g/1lb dried white breadcrumbs
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon garlic salt
  • 1 tablespoon freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 3 or 4 medium or large lobsters, halved, intestines removed

 

PREPARATIONS:

  1. Preheat the oven to 200°C/400°F/Gas mark 6.
  2. Heat the vegetable oil in a frying pan over medium heat. Sauté the chopped onion and garlic for about 5 minutes until translucent.
  3. Add the tomato purée to the pan and cook for 3 minutes. Pour in the red wine and add the clams and their juice. Cook for an additional 5 minutes, allowing the flavors to combine.
