INGREDIENTS:
- 1 lb (500 g) ground lamb or beef
- 2 cups (450 g) mashed potatoes
- 1 small tomato, finely chopped
- 4 green onions (scallions), trimmed and finely chopped
- 1/3 cup (25 g) chickpea flour, plus more if needed
- 4 tablespoons finely chopped fresh coriander leaves (cilantro)
- 2 large eggs, beaten
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon curry powder
- 1/2 teaspoon ground black pepper
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons finely chopped fresh mint leaves
- 1 teaspoon sumac
INSTRUCTIONS:
- Preheat the oven to 350°F (175°C).
- Thoroughly mix together all the ingredients, except the mint and sumac, in a mixing bowl. The mixture should be the texture of ground hamburger. If it is too soft, add a little flour; if too hard, add a little water.
- With moistened hands, form the mixture into patties that are 2 to 3 inches (5 to 7.5 cm) in diameter and 1/2 inch (1.25 cm) thick. Re-wet your hands every so often to keep the mixture from sticking to them.
- Place the patties on a greased baking sheet and bake for about 40 minutes or until browned.
- Place the cooked patties on a serving platter.
- Sprinkle the mint leaves and the sumac over the patties before serving.
- Serve the patties with Warm and Spicy Potato Salad or Zesty Tomato and Fresh Coriander Salad.
