Baked Lamb Kebabs with Aromatic Spices- Kabab Mutabbal

MAKES: About 3 dozen

PREP TIME: 50 minutes

BAKING TIME: 40 minutes

INGREDIENTS:

  • 1 lb (500 g) ground lamb or beef
  • 2 cups (450 g) mashed potatoes
  • 1 small tomato, finely chopped
  • 4 green onions (scallions), trimmed and finely chopped
  • 1/3 cup (25 g) chickpea flour, plus more if needed
  • 4 tablespoons finely chopped fresh coriander leaves (cilantro)
  • 2 large eggs, beaten
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons finely chopped fresh mint leaves
  • 1 teaspoon sumac

 

INSTRUCTIONS:

  1. Preheat the oven to 350°F (175°C).
  2. Thoroughly mix together all the ingredients, except the mint and sumac, in a mixing bowl. The mixture should be the texture of ground hamburger. If it is too soft, add a little flour; if too hard, add a little water.
  3. With moistened hands, form the mixture into patties that are 2 to 3 inches (5 to 7.5 cm) in diameter and 1/2 inch (1.25 cm) thick. Re-wet your hands every so often to keep the mixture from sticking to them.
  4. Place the patties on a greased baking sheet and bake for about 40 minutes or until browned.
  5. Place the cooked patties on a serving platter.
  6. Sprinkle the mint leaves and the sumac over the patties before serving.
  7. Serve the patties with Warm and Spicy Potato Salad or Zesty Tomato and Fresh Coriander Salad.
