INGREDIENTS:

  • 2 teaspoons extra-virgin olive oil
  • 1/2 red bell pepper, julienned
  • 1/2 yellow bell pepper, julienned
  • 1/2 green bell pepper, julienned
  • 1/2 chayote squash, seeded and sliced
  • 1 stick celery, sliced
  • 1 large clove garlic, minced
  • 1/4 cup chicken broth
  • 8 sliced mushrooms
  • 1 teaspoon chopped fresh thyme
  • 1/4 teaspoon white pepper
  • 2 tablespoons dry white wine
  • 1/2 teaspoon salt

 

INSTRUCTIONS:

  1. Heat the extra-virgin olive oil in a skillet over high heat.
  2. Add the julienned red bell pepper, yellow bell pepper, green bell pepper, sliced chayote squash, sliced celery, and minced garlic to the skillet. Sauté the vegetables for 3-4 minutes, stirring often.
  3. Reduce the heat to low and add the chicken broth, sliced mushrooms, chopped fresh thyme, white pepper, dry white wine, and salt to the skillet.
  4. Cook the vegetables, stirring often, for an additional 2 minutes to allow the flavors to blend and the vegetables to soften slightly.
