INGREDIENTS:
- 1 lb smoked bacon, crumbled
- 1 cup pork rinds, crushed
- 5 cups zucchini, minced
- 4 cloves garlic, minced
- 1 cup cream cheese
- 2 1/2 cups grated Parmesan cheese
- 4 oz goat cheese
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and freshly ground black pepper to taste
INSTRUCTIONS:
- Chop or blend the zucchini.
- In a large mixing bowl, combine the crumbled bacon, minced zucchini, cream cheese, goat cheese, 1 cup grated Parmesan, minced garlic, salt, and pepper to taste. Mix well until all the ingredients are incorporated. Refrigerate the mixture for 2-3 hours to firm up.
- Meanwhile, prepare the breading by combining crushed pork rinds, the remaining 1 cup of grated Parmesan cheese, onion powder, and garlic powder in a bowl.
- Remove the zucchini mixture from the fridge and shape it into about 30 even-sized balls.
- Roll each ball in the Parmesan breading mixture until it is well coated.
- Heat oil in a frying pan. Fry the zucchini balls in the hot oil until they turn a nice even golden brown all over.
- Once fried, transfer the zucchini balls to a serving plate and serve hot.
