Bacon Zucchini Fat Bomb Balls

INGREDIENTS:

  • 1 lb smoked bacon, crumbled
  • 1 cup pork rinds, crushed
  • 5 cups zucchini, minced
  • 4 cloves garlic, minced
  • 1 cup cream cheese
  • 2 1/2 cups grated Parmesan cheese
  • 4 oz goat cheese
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper to taste

 

INSTRUCTIONS:

  1. Chop or blend the zucchini.
  2. In a large mixing bowl, combine the crumbled bacon, minced zucchini, cream cheese, goat cheese, 1 cup grated Parmesan, minced garlic, salt, and pepper to taste. Mix well until all the ingredients are incorporated. Refrigerate the mixture for 2-3 hours to firm up.
  3. Meanwhile, prepare the breading by combining crushed pork rinds, the remaining 1 cup of grated Parmesan cheese, onion powder, and garlic powder in a bowl.
  4. Remove the zucchini mixture from the fridge and shape it into about 30 even-sized balls.
  5. Roll each ball in the Parmesan breading mixture until it is well coated.
  6. Heat oil in a frying pan. Fry the zucchini balls in the hot oil until they turn a nice even golden brown all over.
  7. Once fried, transfer the zucchini balls to a serving plate and serve hot.
