Baba Ghanoush is a classic Middle Eastern dip that boasts a smoky and savory flavor profile. INGREDIENTS:

  • 2 cloves garlic, peeled
  • 1 whole eggplant, roasted for 1 hour at 400°F, cooled, and pulp scooped out
  • 1 tablespoon tahini
  • 1 ½ teaspoons kosher salt
  • 2–3 teaspoons toasted cumin powder
  • Juice of 2 lemons
  • ⅓ cup extra-virgin olive oil, plus a little extra for garnish
  • Freshly ground black pepper

INSTRUCTIONS:

  1. In a food processor, chop the garlic until it sticks to the walls of the processor bowl.
  2. Add the eggplant pulp, tahini, salt, cumin, and half of the lemon juice. Process until smooth, gradually drizzling in the olive oil.
  3. Season to taste with black pepper, additional salt, and lemon if necessary.
  4. Spread the Baba Ghanoush onto plates and garnish with a drizzle of extra-virgin olive oil, a few drops of lemon juice, a dusting of paprika, and some chopped parsley, if desired.
