This lovely, cool summer soup is just perfect when it’s too hot to cook. If you can’t find sorrel, try substituting spinach seasoned with lemon juice or zest.

INGREDIENTS:

  • 1 ripe, buttery avocado, pitted and peeled
  • A generous handful of sorrel leaves (discard any tough stems)
  • 1/4 large cucumber, coarsely diced but not peeled
  • 7oz (200g) Greek yogurt
  • 1–2 cloves of garlic, peeled and chopped
  • Salt and freshly ground black pepper
  • 1/2 cup (120ml) water
  • Avocado oil, to serve

 

INSTRUCTIONS:

  1. Place the avocado in a blender with the sorrel, cucumber, yogurt, garlic, salt, and pepper.
  2. Add the water, and then blend. As soon as it is smoothly blended, taste and adjust the seasoning. Add more sorrel if desired.
  3. Thin down with a little more water as needed.
  4. Once you are happy with the taste and consistency, divide between 6 serving bowls or cups.
  5. Drizzle a bit of avocado oil on the surface.
  6. Serve at once, or at least within the next hour while it is fresh and vivid.
