Serves: 8

INGREDIENTS:

  • 2 (15-ounce) cans quartered artichoke hearts, drained and rinsed
  • 1 red pepper, chopped finely
  • 1 green pepper, chopped finely
  • 3 cloves garlic, minced
  • 2 cups mayonnaise
  • White pepper
  • 1 pound grated Parmesan cheese

INSTRUCTIONS:

  1. Preheat the Oven: Preheat your oven to 325°F (163°C).
  2. Mix the Ingredients: In a large mixing bowl, combine the drained and rinsed artichoke hearts, finely chopped red pepper, finely chopped green pepper, minced garlic, mayonnaise, and a pinch of white pepper.
  3. Add Parmesan Cheese: Add most of the grated Parmesan cheese to the mixture, reserving a small portion for topping. Mix all the ingredients until well combined.
  4. Transfer to Baking Dish: Spread the artichoke mixture evenly into a 9 × 9-inch (23 × 23 cm) baking dish or a 1 1/2-quart (1.4 liters) casserole dish.
  5. Top with Parmesan: Sprinkle the remaining grated Parmesan cheese evenly over the top of the mixture.
  6. Bake: Place the baking dish in the preheated oven and bake for approximately 45 minutes or until the top is golden brown and the dip is bubbling.
  7. Serve: Remove the artichoke dip from the oven and let it cool slightly before serving. Serve the dip with your choice of crackers or bread.

SERVING SUGGESTIONS:

  1. Crackers and Bread: Set out an assortment of crackers and slices of crusty bread as dippers for your artichoke dip. You can also toast the bread for added crunch and flavor.
  2. Vegetable Platter: Create a colorful vegetable platter with carrot sticks, cucumber slices, bell pepper strips, and cherry tomatoes. These fresh and crunchy veggies pair wonderfully with the creamy dip.
  3. Tortilla Chips: For a southwestern twist, serve your artichoke dip with tortilla chips. The combination of the dip’s richness and the chips’ saltiness is a winning combination.
  4. Pita Chips: Offer pita chips or pita bread wedges as a dipping option. Their sturdy texture makes them great for scooping up the dip.
  5. Breadsticks: Arrange a selection of breadsticks, including plain, herbed, and whole wheat varieties. They add a delightful crunch to each bite.
  6. Pretzels: Pretzels, whether traditional twists or pretzel crisps, provide a salty contrast that complements the creamy dip.
  7. Fresh Herbs: Garnish the dip with fresh herbs like chopped parsley or chives for a burst of color and a hint of freshness.
  8. Grilled Vegetables: If you’re looking to incorporate more veggies, grill some zucchini, eggplant, or asparagus spears. The smoky flavor pairs beautifully with the creamy dip.
  9. Mini Crostini: Prepare small, bite-sized crostini by toasting baguette slices and topping them with a dollop of artichoke dip.
  10. Cocktail Shrimp: Elevate your dip by serving it alongside cocktail shrimp. The contrast of flavors and textures is truly delightful.

Feel free to mix and match these serving suggestions or get creative with your own favorite dippers. Artichoke dip is a versatile crowd-pleaser that’s open to endless pairing possibilities. Enjoy!
