INGREDIENTS

For the Pie Crust:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 6-8 tablespoons ice water

 

For the Apple Filling:

  • 6-7 cups peeled, cored, and sliced apples (such as Granny Smith, Honeycrisp, or a mix)
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, cubed

 

INSTRUCTIONS

For the Pie Crust:

  1. Prepare the Crust:
    • In a large mixing bowl, combine the all-purpose flour, salt, and granulated sugar.
    • Add the cold, cubed unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
    • Gradually add ice water, one tablespoon at a time, mixing with a fork, until the dough begins to come together. Be careful not to overmix. The dough should hold together when pinched.
  2. Divide the Dough:
    • Divide the dough in half and shape each half into a flat disc. Wrap them in plastic wrap and refrigerate for at least 1 hour or up to overnight.

 

For the Apple Filling:

  1. Prepare the Apples:
    • Peel, core, and slice the apples into even thickness slices. Place them in a large mixing bowl.
  2. Season the Apples:
    • In a separate bowl, combine the granulated sugar, lemon juice, ground cinnamon, ground nutmeg, and salt.
    • Pour the sugar mixture over the sliced apples and toss to coat the apples evenly. Let them sit for about 15-20 minutes to release their juices.
  3. Assemble the Pie:
    • Preheat your oven to 425°F (220°C).
    • Roll out one of the chilled pie crust discs on a lightly floured surface into a circle large enough to fit a 9-inch (23 cm) pie dish. Carefully transfer the crust to the pie dish.
    • Add the prepared apple filling to the pie crust, mounding it in the center.
    • Dot the apples with cubed unsalted butter.
  4. Top the Pie:
    • Roll out the second chilled pie crust disc into another circle. You can create a solid top crust, a lattice design, or any other decorative pattern you prefer.
  5. Seal and Vent:
    • Trim any excess crust and crimp the edges to seal the pie. If using a solid top crust, remember to cut a few small slits or create decorative vents to allow steam to escape.
  6. Bake:
    • Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for 45-55 minutes or until the crust is golden brown and the filling is bubbling.
  7. Cool and Serve:
    • Allow the pie to cool on a wire rack for at least 2-3 hours before serving. This helps the filling set.
    • Serve slices of apple pie warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
