COOKING TIME: 15 minutes

INGREDIENTS:

  • 3 strips of crumbled cooked bacon
  • 6 eggs
  • 2 tbsp coconut oil or butter
  • 1 tbsp butter
  • 1/4 cup softened cream cheese
  • 1/4 cup shredded Gouda cheese
  • Garlic and onion powder
  • Black or white pepper

 

INSTRUCTIONS:

  1. Melt the butter in a small bowl and set it aside. In a separate bowl, beat the eggs and add in the garlic and onion powder, as well as black or white pepper to taste.
  2. Heat some butter in a non-stick skillet over medium heat and scramble the eggs until cooked through.
  3. Transfer the cooked eggs to a large bowl. Add the softened cream cheese and shredded Gouda cheese to the eggs, and mix well.
  4. Stir in the crumbled cooked bacon. Add the melted butter and coconut oil to the mixture.
  5. Pour the batter into mini muffin liners placed on a cookie sheet, with or without wax paper. Alternatively, you can grease the muffin tin directly. Freeze the muffins for about 30 minutes until they set.
  6. Serve and enjoy!
