INGREDIENTS:

  • 3 tablespoons of butter

    Gradually pour in ½ cup of milk while continuing to stir. This will form a creamy sauce. Stir in the yolks of 2 eggs, 1 cup of grated American cheese, and ½ cup of Swiss cheese pieces. Continue to stir until the cheese is completely melted and the mixture is well combined.

  3. Season the Cheese Mixture:

    Season the cheese mixture with a pinch of salt and a dash of cayenne pepper. Adjust the seasoning to your taste preferences. Continue to cook and stir until the mixture thickens and becomes smooth.

  4. Cool the Mixture:

    Remove the cheese mixture from the heat and allow it to cool. This will help it firm up and become easier to handle.

  5. Shape into Croquettes:

    Once the cheese mixture has cooled enough to handle, shape it into croquettes. You can form them into small cylindrical shapes or other desired shapes. Ensure they are compact and hold together.

  6. Coat with Bread Crumbs:

    Roll each cheese croquette in bread crumbs, making sure they are evenly coated. The bread crumbs will create a crispy outer layer when fried.

  7. Fry in Deep Fat:

    Heat deep fat, such as vegetable oil or canola oil, in a deep frying pan or skillet to around 350°F (175°C). Carefully place the coated cheese croquettes into the hot oil, ensuring they are fully submerged. Fry the croquettes until they are golden brown and crispy on the outside. This should take approximately 3-4 minutes. Use a slotted spoon or tongs to remove the fried croquettes from the hot oil and transfer them to a plate lined with paper towels to drain any excess oil.

  8. Serve Hot:

    Cheese croquettes are best enjoyed while hot and crispy. Serve them as a delightful appetizer, snack, or side dish.
