Spiced Chocolate Molten Cakes

Spiced Chocolate Molten Cakes, also known as chocolate lava cakes, are a luxurious and indulgent dessert that combines the rich flavors of chocolate with a delightful surprise inside – a gooey, molten center. These cakes are not only a treat for the taste buds but also a feast for the eyes, as the warm chocolate oozes out when you cut into them. The history of molten chocolate cakes can be traced to the late 20th century when they gained popularity in fine dining establishments. In this recipe, we will explore the captivating history of Spiced Chocolate Molten Cakes and provide you with detailed instructions to create this decadent dessert at home.

The history of Spiced Chocolate Molten Cakes is relatively short, compared to many other classic desserts. These delightful cakes are believed to have been created by French chef Jean-Georges Vongerichten in the 1980s. He accidentally undercooked a chocolate cake but discovered that the result was a gooey, molten interior that was incredibly appealing. Recognizing the potential of this dessert, he refined the recipe and introduced it at his restaurant, JoJo, in New York City.

The popularity of molten chocolate cakes quickly spread, not just in fine dining establishments but also in home kitchens around the world. The allure of cutting into a chocolate cake to reveal a flowing, molten center made these cakes a favorite choice for special occasions, romantic dinners, and celebrations. Variations of the original recipe have emerged, including Spiced Chocolate Molten Cakes, which add warm spices like cinnamon and cayenne pepper to enhance the flavor profile.

INGREDIENTS

For the Cakes:

  • 4 oz (115g) high-quality dark chocolate (70% cocoa or higher), coarsely chopped
  • 1/2 cup (1 stick or 113g) unsalted butter
  • 1/4 cup (30g) all-purpose flour
  • 1/2 cup (60g) powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/2 tsp ground cinnamon
  • 1/8 tsp cayenne pepper (adjust to taste for spiciness)
  • 1/4 tsp vanilla extract
  • A pinch of salt

For Garnish (Optional):

  • Powdered sugar
  • Fresh berries
  • Whipped cream
  • Mint leaves

INSTRUCTIONS

  1. Preheat Your Oven: Preheat your oven to 425°F (220°C). Grease and lightly flour four 6-ounce ramekins or custard cups. Place them on a baking sheet for easy handling.
  2. Melt Chocolate and Butter: In a heatproof bowl, combine the coarsely chopped dark chocolate and unsalted butter. You can melt them together using a double boiler or in the microwave. If using a microwave, heat in 20-second intervals, stirring between each interval until the mixture is smooth and fully melted. Allow it to cool slightly.
  3. Prepare Dry Ingredients: In a separate bowl, sift together the all-purpose flour, powdered sugar, ground cinnamon, cayenne pepper, and a pinch of salt.
  4. Combine Wet Ingredients: In another bowl, whisk together the eggs, egg yolks, and vanilla extract until well combined.
  5. Combine Mixtures: Pour the melted chocolate and butter mixture into the egg mixture and whisk until smooth and well combined.
  6. Add Dry Ingredients: Gradually fold the sifted dry ingredients into the chocolate mixture, stirring until you have a smooth batter.
  7. Fill Ramekins: Divide the batter evenly among the prepared ramekins.
  8. Bake: Place the baking sheet with the ramekins in the preheated oven and bake for about 12-15 minutes. The cakes should be set around the edges but still slightly soft in the center.
  9. Serve: Carefully remove the ramekins from the oven using oven mitts. Run a knife around the edge of each cake to loosen it. Invert the cakes onto serving plates. Dust with powdered sugar, garnish with fresh berries, a dollop of whipped cream, and a sprig of mint if desired. Serve immediately while the centers are molten.

Spiced Chocolate Molten Cakes are a delightful treat that marries the warmth of spices with the richness of chocolate. They make for an impressive dessert to enjoy with loved ones or as a sweet indulgence on special occasions.
