  • 1 cup dried black beans
  • 4 cups water
  • 3 tablespoons olive or vegetable oil
  • 1 medium green bell pepper, seeded and diced
  • 1/2 stalk celery, finely diced
  • 1/2 cup carrots, peeled and grated
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups medium- or long-grain white rice
  • 2 cups Pressure Cooker Vegetable Stock
  • 2 teaspoons paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste

 

INSTRUCTIONS:

  1. Prepare the Black Beans: Begin by rinsing the dried black beans and placing them in a covered container. Pour in 4 cups of water, cover, and allow the beans to soak overnight. Once soaked, drain the beans.
  2. Sauté the Vegetables: Heat the olive or vegetable oil in the pressure cooker over medium-high heat. Add the diced green bell pepper, celery, and grated carrots. Sauté these colorful vegetables for about 2 minutes, allowing their flavors to meld. Add the diced onion and continue sautéing for an additional 3 minutes until the onion becomes soft and translucent. Stir in the minced garlic and sauté for another 30 seconds.
  3. Add Rice and Beans: Stir in the white rice, ensuring it is well-coated with the sautéed vegetables. Continue to stir-fry the rice until it begins to develop a subtle golden brown hue. Now, introduce the drained black beans to the mixture, followed by the Pressure Cooker Vegetable Stock, paprika, cumin, chili powder, and a single bay leaf.
  4. Pressure Cooking: Securely lock the lid in place on the pressure cooker. Bring it to low pressure and maintain this pressure setting for 18 minutes. Once the cooking time elapses, carefully remove the pressure cooker from the heat source.
  5. Season and Serve: Unlock the lid and give the dish a good stir. Taste for seasoning, adding salt and freshly ground black pepper as needed. Don’t forget to remove the bay leaf. Your pressure cooker Cuban black beans and rice are now ready to be enjoyed.
