INSTRUCTIONS

  1. Preheat your oven to 325°F (163°C). Grease and flour a standard-sized Bundt pan or a pound cake pan.
  2. In a medium-sized bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set this dry mixture aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. This usually takes about 2-3 minutes using an electric mixer.
  4. Add the eggs one at a time, beating well after each addition. Be sure to scrape down the sides of the bowl to ensure everything is well combined.
  5. Stir in the pure vanilla extract and spiced rum.
  6. Gradually add the dry mixture to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake in the preheated oven for approximately 50-60 minutes, or until a toothpick or cake tester comes out clean when inserted into the center of the cake.
  9. While the cake is baking, prepare the rum glaze. In a small bowl, combine the powdered sugar, spiced rum, melted butter, and vanilla extract. Stir until the glaze is smooth and glossy.
  10. Once the cake is done baking, allow it to cool in the pan for about 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
  11. Once the cake is completely cool, drizzle the rum glaze over the top, allowing it to drip down the sides of the cake.
