INGREDIENTS:

For the Balls of Dough:

  • 1 cup condensed milk
  • 110 grams plain flour
  • 1 and a half teaspoons baking powder
  • Half teaspoon soda
  • 1 and a half cups milk
  • 25 grams sugar, warmed
  • Oil for frying

 

For Syrup:

  • 1 cup caster sugar
  • 100 ml water
  • Saffron (as per your preference)

 

For Garnishing:

  • 1 tablespoon pistachio nuts, sliced
  • 1 tablespoon almonds, toasted in a skillet

 

INSTRUCTIONS:

  1. In a bowl, combine all the ingredients for the dough balls. Add enough water to form a smooth, sticky dough. Cover the bowl and set it aside for 20 minutes. After resting, shape the dough into small, round pieces.
  2. Heat oil in a deep fryer with thick sides.
  3. Fry the dough balls in the hot oil until they turn a light brown color. Once fried, remove them from the oil using a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.
  4. In a separate saucepan, prepare the sugar syrup by boiling the caster sugar and water. Add saffron strands according to your preference to infuse the syrup with flavor and color.
  5. Once the dough balls are cooked and the syrup is ready, gently add the fried balls to the sugar syrup. Allow them to soak in the syrup for about 1 hour, ensuring they absorb the sweetness.
