Blueberry Jam is a delightful and versatile addition to your pantry. Whether you spread it on toast for a quick and delicious breakfast or use it as a filling for pastries, this homemade blueberry jam is sure to be a family favorite. Making jam in your pressure cooker is a convenient way to preserve the freshness and flavor of blueberries. Let’s dive into creating this sweet and tangy jam that captures the essence of ripe blueberries with a hint of citrus.
Yields: 4 cups
INGREDIENTS:
- 4 cups blueberries
- 4 cups granulated cane sugar
- 1 cup orange juice
- 1 teaspoon orange zest
- Pinch of freshly ground nutmeg
- Pinch of salt
- 1 (1⁄8-ounce) package dry pectin
INSTRUCTIONS:
- In your pressure cooker, combine the blueberries, granulated cane sugar, orange juice, orange zest, nutmeg, and a pinch of salt. Stir the mixture until all the ingredients are well combined.
- Lock the pressure cooker lid securely in place and bring it to low pressure. Maintain this pressure for 3 minutes. Afterward, remove the pressure cooker from the heat source and allow the pressure to release naturally.
- Remove the lid from the pressure cooker. At this point, you have two options to separate the pulp from the skins:
- Option 1: Process the mixture in a food mill to extract the pulp, leaving the skins behind.
- Option 2: Push the blueberry mixture through a strainer, collecting the pulp and leaving the skins behind.
- Return the extracted pulp to the pressure cooker. Place it over medium-high heat, add the dry pectin, and bring the mixture to a rolling boil, stirring constantly. Continue to boil and stir for 1 minute.
- As the jam cooks, you may notice some foam forming. Skim off and discard any foam to achieve a smooth consistency.
- Ladle the hot blueberry jam into hot, sterilized glass containers or jars, leaving about 1 inch of headspace. Seal the containers or jars.
- Allow the jam to cool and refrigerate it for up to 5 weeks or freeze it for up to 8 months. If you prefer long-term storage, you can also follow the instructions that came with your canning jars and process the preserves for shelf storage.
NOTE:
- The foam may contain impurities or air bubbles that can affect the jam’s appearance and texture, so removing it is essential for achieving a high-quality product.
PRO TIP:
- For easier and more precise filling of jars, consider using a canning funnel when transferring the jam to containers.
