Blueberry Jam is a delightful and versatile addition to your pantry. Making jam in your pressure cooker is a convenient way to preserve the freshness and flavor of blueberries. Yields: 4 cups

 

INGREDIENTS:

  • 4 cups blueberries
  • 4 cups granulated cane sugar
  • 1 cup orange juice
  • 1 teaspoon orange zest
  • Pinch of freshly ground nutmeg
  • Pinch of salt
  • 1 (1⁄8-ounce) package dry pectin

 

INSTRUCTIONS:

  1. In your pressure cooker, combine the blueberries, granulated cane sugar, orange juice, orange zest, nutmeg, and a pinch of salt. Stir the mixture until all the ingredients are well combined.
  2. Lock the pressure cooker lid securely in place and bring it to low pressure. Maintain this pressure for 3 minutes. Afterward, remove the pressure cooker from the heat source and allow the pressure to release naturally.
  3. Remove the lid from the pressure cooker. At this point, you have two options to separate the pulp from the skins:
    • Option 1: Process the mixture in a food mill to extract the pulp, leaving the skins behind.
    • Option 2: Push the blueberry mixture through a strainer, collecting the pulp and leaving the skins behind.
  4. Return the extracted pulp to the pressure cooker. Place it over medium-high heat, add the dry pectin, and bring the mixture to a rolling boil, stirring constantly. Continue to boil and stir for 1 minute.
  5. As the jam cooks, you may notice some foam forming. Skim off and discard any foam to achieve a smooth consistency.
  6. Ladle the hot blueberry jam into hot, sterilized glass containers or jars, leaving about 1 inch of headspace. Seal the containers or jars.
  7. Allow the jam to cool and refrigerate it for up to 5 weeks or freeze it for up to 8 months. If you prefer long-term storage, you can also follow the instructions that came with your canning jars and process the preserves for shelf storage.

 

NOTE:

  • The foam may contain impurities or air bubbles that can affect the jam’s appearance and texture, so removing it is essential for achieving a high-quality product.

  • For easier and more precise filling of jars, consider using a canning funnel when transferring the jam to containers.
