  • Half a box of Fry’s Korma Curry Parts (defrosted)
  • One medium potato, boiled and then mashed
  • One big onion, finely chopped
  • Two green chilies, finely chopped
  • Half a teaspoon of mustard seeds
  • Four curry leaves
  • Half a teaspoon of minced ginger
  • Half a teaspoon of minced garlic
  • Half a teaspoon of turmeric powder
  • Half to three-fourths teaspoon of chili powder
  • One teaspoon of coriander
  • Half a teaspoon of cumin powder
  • Two tablespoons of fresh coriander, chopped
  • Half a teaspoon of coriander powder
  • Half a teaspoon of cumin powder
  • Samosa pastry sheets
  • Butter (for brushing)

 

INSTRUCTIONS:

Creating Vegan Potato and Korma Samosas:

  1. Prepare the Spice Mixture: In a pan, heat oil over medium heat. Add mustard seeds and curry leaves, allowing them to splutter. Stir in the finely chopped ginger, garlic, and onions, sautéing until the onions turn translucent.
  2. Add Spices and Korma Curry Parts: Add the finely chopped green chilies, defrosted Fry’s Korma Curry Parts, and the remaining spices (turmeric powder, chili powder, coriander, cumin powder, and coriander powder). Mix the ingredients well and cook over low heat for 10-15 minutes, adding water if necessary to prevent sticking.
  3. Incorporate Mashed Potatoes: Add the boiled and mashed potato to the pan, blending it well with the spice mixture. Continue cooking for a few more minutes to allow the flavors to meld.
  4. Add Fresh Coriander: Stir in the chopped fresh coriander, ensuring it is well combined with the mixture. Turn off the heat and allow the filling to cool.
  5. Fill the Samosas: Spoon equal portions of the filling into samosa pastry sheets. Carefully fold the pastry sheets into triangular samosas, sealing the edges with a little water or flour paste.
  6. Brush with Butter: Brush each samosa with a thin layer of melted butter to enhance their golden color and crispiness.
  7. Air Fry the Samosas: Arrange the samosas in the air fryer basket, ensuring they are not overcrowded. Air fry the samosas at 185°C (365°F) for approximately 15 minutes or until they are golden brown and crispy.
