- 2 celery ribs, diced
- 1 medium potato, peeled and diced
- ½ bunch fresh parsley, chopped
- ½ cup (125ml) dry white wine
- 1¼ quarts (1¼ liters) hot chicken stock
- 3 Toulouse sausages or kielbasa
- 1lb 10oz (750g) peas (frozen or fresh)
- Salt and freshly ground black pepper
