INGREDIENTS:

  • 2 tbsp extra virgin olive oil
  • 4 scallions, sliced
  • 2 cloves garlic, chopped
  • 1lb 5oz (600g) fennel (trimmed weight), coarsely chopped
  • 1 celery heart with leaves, or 3 celery ribs, chopped
  • 1 cooking apple, peeled, cored and coarsely chopped
  • Sea salt
  • 31⁄4 cups (750ml) vegetable stock
  • Fennel fronds, to serve

 

INSTRUCTIONS:

  1. Heat the extra virgin olive oil in a large pan over medium heat.
  2. Add the sliced scallions and cook for about 3 minutes until softened.
  3. Stir in the chopped garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the coarsely chopped fennel, chopped celery, and apple to the pan. Sprinkle with a bit of sea salt. Stir to combine.
  5. Cover the pan and let the vegetables and apple sweat for about 10 minutes. Stir occasionally to prevent sticking.
  6. Pour the vegetable stock into the pan and bring the mixture to a gentle boil.
  7. Reduce the heat and let the soup simmer for approximately 15 minutes, or until the fennel is tender.
  8. Remove the pan from the heat and allow the soup to cool slightly.
  9. Use a hand blender to puree the mixture until smooth and creamy.
  10. Taste the soup and adjust the seasoning with salt if needed.
  11. Serve the soup hot for immediate enjoyment or allow it to cool completely and refrigerate for several hours to serve chilled.
  12. Before serving, garnish each bowl with torn fennel fronds for added visual appeal and a touch of flavor.
