INGREDIENTS:

  • 2 cups broccoli florets (about ½ pound broccoli crowns)
  • 1 egg, beaten
  • ⅛ teaspoon onion powder
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 2 tablespoons grated Parmesan cheese
  • ¼ cup panko breadcrumbs
  • Oil for misting

 

INSTRUCTIONS:

  1. Begin by steaming the broccoli florets for about 2 minutes. After steaming, rinse them in cold water to stop the cooking process, then drain well. Finely chop the steamed broccoli and set it aside.
  2. In a large bowl, combine the finely chopped broccoli with the beaten egg, onion powder, salt, pepper, grated Parmesan cheese, and panko breadcrumbs. Mix all the ingredients thoroughly until well incorporated.
  3. Using small portions of the mixture, shape it into 24 tots. As you shape each tot, lay them on a cookie sheet or wax paper for easy transfer.
  4. Place the tots in the air fryer basket in a single layer. To prevent sticking and ensure a crispy exterior, mist the tots with a light coating of oil.
  5. Set the air fryer to 390°F (199°C) and cook the tots for 5 minutes. After the initial cooking time, shake the basket to ensure even cooking, then mist the tots with oil once again. Cook for an additional 5 minutes, or until the tots are browned and crispy.
