INGREDIENTS

  • 1-1/2 pounds veal
  • 2 hard-cooked eggs
  • A few grains of red pepper
  • A dusting of powdered mace
  • 1/2 teaspoon grated lemon rind
  • 1/2 pound ham
  • 1 tablespoon flour
  • 1 teaspoon salt
  • 6 whole peppercorns
  • Powdered sweet herbs
  • Pastry (for lining and covering the pie)

INSTRUCTIONS

  1. Begin by preparing the filling for the pie. Cut the veal and ham into very thin slices.
  2. On a plate, mix together the flour, salt, pepper, powdered sweet herbs, grated lemon rind, red pepper, and a dusting of powdered mace.
  3. Roll each slice of veal in this seasoned mixture, ensuring they are evenly coated.
  4. In a pie dish, begin layering the seasoned veal, ham, and hard-cooked egg slices alternately. Create a pleasing pattern or design in the layers.
  5. Pile the layered filling in the center of the pie dish.
  6. Add 1/2 cup of water to the pie dish to provide moisture during baking.
  7. Prepare the pastry for the pie. Line the edge of the dish with pastry and cover the top of the pie, decorating it as desired.
  8. Bake the pie in the oven until the pastry is golden brown and the filling is cooked through.
  9. Once the pie is baked and has cooled slightly, add a little very well-seasoned stock over the top of the filling. This stock should become a jelly when the pie is cold. Alternatively, you can add a small amount of gelatine to achieve the jelly-like consistency.
  10. If serving the pie cold, garnish it with parsley for an appealing presentation.
