  • 350g Sweet Potato, chopped
  • 1 potato (200g), chopped
  • 1 small parsnip (120g), chopped
  • 1 large zucchini (150g), chopped
  • 100g small broccoli florets

 

INSTRUCTIONS:

  1. Heat the olive oil in a medium saucepan over high heat.
  2. Add the chopped sweet potato, potato, and parsnip to the saucepan. Stirring continuously, cook for about 2 minutes to lightly sauté the vegetables.
  3. Pour in ½ cup of water to the saucepan. Allow the mixture to come to a boil, then reduce the heat to a simmer. Let it simmer for approximately 10 minutes, allowing the vegetables to soften and become tender.
  4. After the initial 10 minutes, incorporate the chopped zucchini and broccoli into the saucepan. Stir well to combine all the vegetables evenly.
  5. Cover the saucepan and continue to simmer the mixture for an additional 10 minutes. This will ensure that all the vegetables reach the desired tenderness.
  6. Once the vegetables are fully cooked and tender, remove the saucepan from the heat.
  7. To create the mash, use a potato masher or a fork to mash the vegetables to your preferred consistency. You can make it smooth or leave some texture, depending on your preference.
