MAKES: ABOUT 1½ CUPS

 

INGREDIENTS:

  • 6 to 8 garlic cloves
  • ¾ teaspoon kosher salt or coarse sea salt, or more to taste
  • 1 large egg and 2 large egg yolks, at room temperature
  • ½ teaspoon fresh lemon juice
  • ½ cup vegetable oil or sunflower oil
  • ½ cup extra-virgin olive oil
  • 2 tablespoons freshly grated horseradish, or more to taste

 

INSTRUCTIONS:

  1. Crush the garlic and salt together in a small mortar. Scrape up the mixture and transfer it to a food processor.
  2. Add the egg, egg yolks, and lemon juice to the food processor. With the processor running, drizzle in the vegetable oil, followed by the olive oil.
  3. Once a fluffy mayonnaise-like emulsion forms, stop the processor and stir in the freshly grated horseradish.
  4. Taste the horseradish aioli and adjust the seasoning with more salt if needed.
  5. Serve a spoonful of the horseradish aioli on top of or beside a steak. This flavorful condiment adds a zesty kick to your steak dish.
