MAKES: ABOUT 1½ CUPS

  • ½ cup water
  • 3 tablespoons granulated sugar
  • 2 or 3 fresh jalapeños, seeded and chopped
  • 1 garlic clove, minced
  • Juice of 1 medium lime

 

INSTRUCTIONS:

  1. In a small saucepan, combine the watermelon juice, water, sugar, chopped jalapeños, and minced garlic.
  2. Bring the mixture to a simmer over medium heat, stirring to dissolve the sugar.
  3. Remove the syrup from the heat and stir in the freshly squeezed lime juice.
  4. Serve the watermelon-jalapeño sauce warm on or alongside pork at the table.
  5. The sauce can be stored in a covered container in the refrigerator for up to 5 days. Before using it again, remember to reheat it.
