Tabbouleh is a classic and refreshing Middle Eastern salad that combines the wholesome flavors of bulgur, tomatoes, parsley, mint, and a zesty lemon dressing. This delightful dish offers a balance of textures and vibrant flavors that make it a perfect side dish or even a light meal on its own. In our version of Tabbouleh, we’ve developed some key techniques to ensure a delicious and well-balanced salad.

 

SERVES 4

 

INGREDIENTS:

  • 3 tomatoes, cored and cut into ½-inch pieces
  • Salt and pepper
  • ½ cup medium-grind bulgur, rinsed
  • ¼ cup lemon juice (from 2 lemons)
  • 6 tablespoons extra-virgin olive oil
  • ⅛ teaspoon cayenne pepper
  • 1½ cups minced fresh parsley
  • ½ cup minced fresh mint
  • 2 scallions, sliced thin

 

INSTRUCTIONS:

  1. Prepare the Tomatoes: Toss the tomatoes with ¼ teaspoon of salt in a fine-mesh strainer set over a bowl. Allow them to drain for about 30 minutes, tossing occasionally. This step removes excess moisture from the tomatoes, ensuring a crisp and refreshing texture for the salad. Reserve 2 tablespoons of the drained tomato juice.
  2. Soak the Bulgur: In a separate bowl, toss the rinsed bulgur with 2 tablespoons of lemon juice and the reserved tomato juice. Let it sit for 30 to 40 minutes until the grains begin to soften and absorb the flavorful liquid.
  3. Prepare the Dressing: In a large bowl, whisk together the remaining 2 tablespoons of lemon juice, extra-virgin olive oil, cayenne pepper, and ¼ teaspoon of salt. This zesty dressing will add brightness and a delightful kick to the Tabbouleh.
  4. Combine the Ingredients: Add the drained tomatoes, soaked bulgur, minced parsley, minced mint, and sliced scallions to the dressing. Gently toss all the ingredients to combine, ensuring they are evenly coated with the dressing.
  5. Let it Rest: Cover the bowl and let the Tabbouleh sit at room temperature for about 1 hour. This resting period allows the flavors to meld together and allows the bulgur to become tender.
  6. Final Touch: Before serving, give the Tabbouleh a final toss to recombine all the ingredients. Season with salt and pepper to taste, adjusting the seasoning according to your preferences.

 

VARIATION: Spiced Tabbouleh

For a unique twist, you can add an exotic touch to the Tabbouleh by incorporating spiced flavors. Mix ¼ teaspoon of ground cinnamon and ¼ teaspoon of ground allspice into the dressing along with the cayenne pepper. These warm and aromatic spices will elevate the dish and add a delightful complexity to the flavors.

 

TIPS:

  • Salting the tomatoes: Salting the tomatoes and allowing them to drain helps eliminate excess moisture, preventing the salad from becoming soggy. This step enhances the texture and flavor of the final dish.
  • Soaking the bulgur in lemon juice and tomato liquid: Instead of soaking the bulgur in water, we use lemon juice and some of the drained tomato liquid to infuse the grains with a burst of tangy and fresh flavors.
  • Use scallions for mild oniony flavor: A whole chopped onion can be overpowering, so we opted for scallions, which contribute a milder and balanced onion flavor to the Tabbouleh.
  • Mixing herbs and vegetables while soaking the bulgur: By combining the herbs and vegetables with the soaking bulgur, the ingredients have time to blend and intermingle, resulting in a cohesive and well-incorporated salad.
  • Distinguishing bulgur from cracked wheat: When shopping for this recipe, ensure you choose bulgur, not cracked wheat. Cracked wheat has a longer cooking time and won’t provide the desired results.
