SERVES 8 TO 10

INGREDIENTS:

  • 1 pound asparagus, trimmed and cut into 1-inch pieces
  • Salt and pepper
  • 1 pound dried cheese tortellini
  • 12 ounces cherry tomatoes, halved
  • 3 tablespoons lemon juice
  • 1 shallot, minced
  • 1 garlic clove, minced
  • 6 tablespoons extra-virgin olive oil
  • ½ cup chopped fresh basil
  • 1 ounce Parmesan cheese, grated (½ cup)
  • ¼ cup pine nuts, toasted

INSTRUCTIONS:

  1. Blanch the Asparagus: Bring 4 quarts of water to a boil in a large pot. Prepare a bowl of ice water. Add the asparagus and 1 tablespoon of salt to the boiling water and cook until it becomes crisp-tender, about 2 minutes. Use a slotted spoon to transfer the blanched asparagus to the ice water and let it cool for about 2 minutes. Drain the asparagus and pat it dry.
  2. Cook the Tortellini: Return the pot of water to a boil. Add the dried cheese tortellini and cook, stirring often, until it becomes tender. Drain the tortellini, rinse them with cold water, and drain again, leaving the tortellini slightly wet. Toss the tortellini and cherry tomatoes together in a large bowl.
  3. Prepare the Dressing: In a small bowl, whisk together the lemon juice, minced shallot, minced garlic, ½ teaspoon of salt, and ½ teaspoon of pepper. While whisking constantly, drizzle in the extra-virgin olive oil to create the dressing.
  4. Combine the Salad: Stir the dressing into the tortellini mixture. Cover the bowl and let it sit for 15 minutes, allowing the flavors to meld. If you plan to serve the salad later, you can refrigerate the salad and blanched asparagus separately for up to one day. Before serving, refresh the salad with warm water and additional oil if needed.
  5. Add the Asparagus and Garnish: Stir in the blanched asparagus, chopped fresh basil, grated Parmesan cheese, and toasted pine nuts. Season the pasta salad with salt and pepper to taste.
  6. Serve: Your Tortellini Salad with Asparagus and Fresh Basil Dressing is now ready to be enjoyed. Serve it as a delicious and crowd-pleasing dish that is sure to impress your guests with its vibrant flavors and enticing textures.

TIPS:

  • Blanching Asparagus: To blanch the asparagus, cook it in boiling water for about 2 minutes until it becomes crisp-tender. Quickly transfer it to ice water to stop the cooking process and retain its bright green color. Pat it dry before adding it to the salad.
  • Cooking Tortellini: Cook the tortellini until it is tender but not overcooked. Rinse the cooked tortellini with cold water, leaving them slightly wet, which helps to improve the texture of the finished salad.
  • Marinating the Salad: The tortellini and tomatoes are marinated in the lemon-basil dressing for 15 minutes, allowing the flavors to meld and infuse into the pasta and tomatoes.
  • Make-Ahead Option: You can prepare the salad and blanched asparagus separately and refrigerate them for up to one day. Before serving, refresh the salad with warm water and additional oil if needed.
