MAKES: ABOUT 2 CUPS
INGREDIENTS:
- ¾ cup white vinegar
- ½ cup yellow mustard
- ½ cup coarse-grain brown mustard
- ⅓ cup water
- 1 medium onion, minced
- 1 tablespoon packed brown sugar
- 1 teaspoon celery seeds
- ½ teaspoon freshly ground black pepper
- ½ teaspoon kosher salt or coarse sea salt
INSTRUCTIONS:
- In a saucepan, combine all of the ingredients.
- Bring the mixture to a simmer over medium-high heat.
- Reduce the heat to low and cook the sauce for 20 to 25 minutes, or until the onion is tender and the sauce thickens.
- Serve the sauce warm or chilled on or alongside smoked pork.
- Store any leftover sauce in a covered container in the refrigerator, where it will keep for about 2 weeks.
