  2. Place the beef in a large resealable plastic bag and add the cooled vinegar mixture, ensuring the roast is well coated. Put the bag in a baking dish and refrigerate it for 2 days, turning occasionally to marinate evenly.
  3. Drain the beef, discarding the marinade and vegetables in the bag, and pat the roast dry. In a Dutch oven, brown the roast on all sides in butter. Add the reserved vinegar mixture to the Dutch oven and bring it to a boil. Reduce the heat, cover, and simmer until the meat is tender, approximately 3 hours.
