INGREDIENTS:

  • 5 or 6 medium to large onions (about 2 pounds)
  • 1/3 cup plus 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper
  • 1 pound linguine or other long pasta
  • Freshly grated Parmesan cheese

 

INSTRUCTIONS:

  1. Slice the onions thinly; you can use a food processor’s slicing disk for this task. Place the sliced onions in a large dry skillet over medium-low heat, cover, and cook. Check and stir the onions every 5 minutes. As they cook, the onions will release lots of liquid and then gradually dry out. After about 20 to 30 minutes, when they begin to brown and stick to the pan, remove the cover.
  2. Add 1/3 cup of olive oil, along with a generous sprinkling of salt and pepper to the onions. You can choose to make the sauce up to this point, cover it, and refrigerate it for up to 2 days, if needed. Turn the heat up to medium.
  3. Bring a large pot of water to a boil and add salt to it. Continue cooking the onions until they are uniformly brown, soft, and almost pasty, for an additional 10 to 20 minutes.
  4. Cook the pasta in the boiling water until it is tender but not mushy. Once the pasta is cooked, drain it, reserving about 1/2 cup of the cooking water. Taste the onions and adjust the seasoning as necessary. Add the remaining 2 tablespoons of olive oil and a little of the reserved water to the onions.
  5. Drain the pasta and toss it with the caramelized onions and some freshly grated Parmesan cheese. If the mixture seems dry, add a bit of the reserved water to achieve the desired consistency. Serve the dish, passing additional Parmesan at the table for those who wish to add more.
